• Tsar Nicoulai has been sustainably farming California White Sturgeon in their native Sacramento River Delta since 1984, in partnership with UC Davis.
• The farm is ECOCERT certified, solar powered, and home to an on-site hatchery and smokehouse that operates on a fraction of the energy of typical systems.
• Every fish is fully utilized, with smoked sturgeon, paté, and sturgeon chicharrones produced on-site while orchards and wildlife flourish around the ponds.

Pair it with chips and crème fraîche, make a decadent grilled cheese, or enjoy it on its own with our Fishwife mother of pearl spoon.

• Store caviar at a consistent temperature between 32°–38° F. The ideal place to store it is in the coldest part of your refrigerator, like the back bottom drawer. You can also keep it on ice.
• Caviar is a delicacy best savored at its peak freshness. Enjoy within 14-20 days of its arrival. It will remain safe to eat until the best by date listed on the bottom of the jar.
• Once opened, keep cold and consume within 48 hours.

• Our caviar ships overnight directly from our caviar supplier.
• Please note, if you ordered caviar in addition to other Fishwife products, you will receive two shipping notifications from us - one for your caviar order that aligns with the date of your chosen delivery, and another for all other Fishwife products you've purchased.
• On our check out page, you can choose your preferred date of delivery to ensure you are home when the product arrives. It is important for someone to be home as the caviar needs to be refrigerated upon arrival.
• The cost of overnight shipping our caviar is free!
• Due to the need for cold shipping, we aren't able to ship our caviar to Alaska or Hawaii.
