Mediterranean smoked mackerel toast
For the tzatziki:
2 heaping tbsp of greek yogurt
1 garlic clove
Juice of half a lemon
1 tbsp dill
Sprinkle of zaatar
Drizzle of olive oil
Sea salt and pepper
Sourdough
The rest: You can really do whatever veggies you want, but this has:
Fishwife smoked mackerel with chili flakes
Diced pepper
Pickled rainbow radishes
Light green jalapeño (a little less spicy)
Sliced persian cucumbers
Dill
Olive oil
Cherry tomatoes
Lemon juice
Sea salt
Pepper
Step 1: Combine all the tzatziki ingredients in a bowl. Season to taste.
Step 2: Combine the rest of the ingredients in a bowl and season with olive oil and some lemon juice.
Step 3: Coat bread in olive oil and cook in a skillet for 2-3 min per side.
Step 4: Spread tzatziki on toast and top with the mediterranean mix. Enjoy!
