Smoked Salmon & Lemon Creme Fraiche Potato Chips
1/4 cup creme fraiche or sour cream
1 lemon, zested
Kosher salt, to taste
Freshly ground black pepper, to taste
24 kettle cooked or ridged potato chips
1 tin Fishwife Smoked Salmon, flaked into 1/2-inch pieces
Fresh chives, thinly sliced, for garnish
Extra virgin olive oil, for garnish
In a small bowl, mix creme fraiche and lemon zest. Season to taste with salt and pepper.
Arrange potato chips on a serving platter. Top each chip with about 1 teaspoon creme fraiche mixture. Top each with a piece of salmon. Garnish with fresh chives, black pepper, and olive oil, and serve immediately.
