Marinated Tomato and Olive Toast
Ingredients:
1 tin Fishwife Smoked Salmon, flaked
1 cup grape tomatoes, quartered
⅓ cup pitted green olives, quartered
⅓ cup pitted black olives, quartered
¼ cup fresh basil, chopped
2 tablespoons extra virgin olive oil, plus more for drizzling
1 lemon, zested
1 tablespoon red wine vinegar
Kosher salt, to taste
Freshly ground black pepper, to taste
¼ cup whole milk ricotta
2 slices sourdough, toasted
Directions:
In a medium bowl, mix tomatoes, olives, basil, flaked salmon, olive oil, lemon zest, and red wine vinegar. Season to taste with salt and pepper.
Divide ricotta between toasts and spread with the back of a spoon. Spoon tomato mixture over toasts. Drizzle with olive oil and serve immediately.
