Fishwife Smoked Salmon
- • 1 tin Fishwife Smoked Salmon, flaked
- • 1 cup grape tomatoes, quartered
- • ⅓ cup pitted green olives, quartered ⅓ cup pitted black olives, quartered
- • ¼ cup fresh basil, chopped
- • 2 tablespoons extra virgin olive oil, plus more for drizzling
- • 1 lemon, zested 1 tablespoon red wine vinegar Kosher salt, to taste Freshly ground black pepper, to taste
- • ¼ cup whole milk ricotta
- • 2 slices sourdough, toasted
- In a medium bowl, mix tomatoes, olives, basil, flaked salmon, olive oil, lemon zest, and red wine vinegar.
- Season to taste with salt and pepper.
- Divide ricotta between toasts and spread with the back of a spoon.
- Spoon tomato mixture over toasts. Drizzle with olive oil and serve immediately.
