Fishwife Albacore Tuna in Olive Oil
- • 2 tins Fishwife Tuna, drained
- • ½ cup Hellman’s mayonnaise
- • 1 teaspoon Dijon mustard
- • 1 stalk celery, finely chopped
- • ¼ cup finely chopped fresh dill
- • ¼ cup finely chopped red onion
- • ¼ cup finely chopped apple (such as Honeycrisp)
- • 2 dill pickle spears, finely chopped
- • 1 lemon, zested and juiced
- • Kosher salt, to taste
- • Freshly ground black pepper, to taste
- • 4 slices sourdough, lightly toasted
- In a medium bowl, add Fishwife tuna and gently flake with the back of a fork.
- Add Hellman’s mayonnaise, mustard, celery, dill, red onion, apple, pickles, lemon zest, and lemon juice. Season to taste with salt and pepper.
- Place 2 slices sourdough on a cutting board. Divide tuna mixture between slices and top each with remaining 2 slices. Cut each sandwich in half and serve immediately.
