Fishwife California White Sturgeon Caviar
Ingredients
- • 12 large eggs
- • ⅓ cup mayonnaise
- • 1–2 Tbsp Dijon mustard
- • 1–2 Tbsp olive oil
- • 1–2 Tbsp pickle juice
- • 1 tsp fresh dill, finely chopped
- • 2 tsp fresh parsley, finely chopped
- • 3 chives, finely sliced
- • 3–4 cornichons, finely chopped
- • 1 tin of Fishwife Smoked Atlantic Salmon
- • Fishwife California White Sturgeon Caviar
- • Kosher salt + black pepper, to taste
- • Extra fresh dill, for garnish
Directions
- Place eggs in a large pot and add water until the eggs are fully covered. Bring to a boil over high heat. Once boiling rapidly, turn off the heat and let the eggs sit for 10 minutes. Transfer to an ice bath and cool completely, about 30 minutes.
- Peel and slice the eggs in half lengthwise. Gently remove the yolks and transfer them to a food processor or blender.
- Add mayonnaise, Dijon, herbs, olive oil, pickle juice, salt, and pepper. Blend again until creamy and silky.
- In a small bowl, combine the chopped cornichons and the smoked salmon. Fold into the yolk mixture until evenly distributed for texture.
- Refrigerate the filling for 1-2 hours. Taste and adjust seasoning or texture if needed (more olive oil/pickle juice for creaminess).
- Pipe or spoon the filling back into the egg whites. Garnish with fresh dill and a small spoonful of caviar on each. Enjoy!
