Pasta with a Mushroom Anchovy Cream Sauce

Ingredients
  • 1 tin of Fishwife anchovies
  • 1 shallot
  • 2 tbsp Algae cooking oil
  • 4oz shiitake mushrooms
  • 1 cup heavy cream
  • ¼ cup freshly grated Parmesan
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 box of pasta
  • Drizzle of shitake mushroom finishing oil
Directions
  1. Cook pasta per package directions.
  2. Sauté shallot and anchovies in Algae cooking oil. Once softened, add mushrooms and cook through.
  3. Add in heavy cream, Parmesan, salt, pepper, mix well and cook down for 5-10 minutes.
  4. Fold in pasta, a couple splashes of reserved cooking water, and enjoy!
