Ingredients

  • 2 slices of bread
  • 1 tin of Smoked Rainbow Trout with Red Chimichurri
  • 3 tbsp mayo
  • 1 thick tomato slice
  • 1 thick iceberg lettuce chunk
  • 1 pinch of flaky salt

Directions

  1. Slice 1 ripe tomato (preferable heirloom) into thick rounds.
  2. Rinse and dry a head of lettuce, cutting into thick rounds (like the tomato!)
  3. Open a tin of smoked rainbow trout; drain the red chimichurri sauce into 3 tbsp of mayo, mix together.
  4. Build your sandwich: smear the chimichurri mayo on both slices of bread and top with tomato slice (seasoned with flaky salt), lettuce slice, and both smoked rainbow trout filets.
  5. Close your sandwich, cut down the middle, and enjoy!
