
Tomato Alla Vodka + Anchovy Pizza Toast
Makes 4 toasts
4 thick cut slices sourdough
2 large garlic cloves
1 (15 ounce) can Heyday tomato alla vodka beans
2 ounces fresh mozzarella, torn
1 tin Fishwife anchovies
Freshly grated Parm, for garnish
Fresh basil, for garnish
Red pepper flakes, for garnish
Flaky salt and black pepper, to taste
Place a rack in the upper third of your oven and preheat to a high broil. Arrange sourdough on a sheet pan. broil until lightly toasted, 1-2 minutes (depending on the strength of your broiler), flipping after the first side gets toasted.
While the bread is still hot, gently grate the garlic cloves on the toast and rub the entire side with garlic. Divide beans among toast, then top with mozzarella. Return pan under the broiler until beans are warmed and mozzarella is bubbling and lightly golden, 2-3 minutes.
Transfer to a serving platter and top with anchovies, Parm, basil, red pepper flakes, flaky salt, black pepper, and drizzle with anchovy oil. Serve immediately.
